Vin Mehta's entrepreneurial journey has taken another exciting turn. After building and selling a successful portfolio of more than 60 Jack in the Box franchises across Oregon and Washington, Mehta, alongside his son Rohit, is now bringing Starbird, an emerging chicken concept, to the Pacific Northwest. Through their Mehta Investment Group, they plan to open 15 locations in Seattle and two in Spokane by 2025, combining decades of experience with a shared passion for innovative dining experiences.

Perhaps no word sums up Vin Mehta's performance as a Jack in the Box franchisee better than "exponential." So exponential, in fact, that the Medford man now owns every Jack in the Box franchise in the state of Oregon.

In 15 years, Mehta's holdings have gone from two Medford Jack in the Box stores to 64 in Oregon and southwest Washington. The greatest growth has come in the past two years, as he acquired 43 formerly corporate-owned locations.
